Medicated Taiwanese Braised Pork Over Rice

This braised pork over rice (aka Lu Rou Fan,  滷肉飯) is the ultimate comfort food and a staple in every Taiwanese household. You can't go wrong with oh-so-tender pork belly in an umami-bomb braise, served with an unctuous 7-minute egg, and crisp daikon pickles.

Make a big batch, the leftovers get tastier throughout the week, I promise!

Medicated Taiwanese Braised Pork Over Rice
Serves 4-6

Ingredients:
• 2lb pork belly, skin-on
• 1 cup vegetable oil
• 3 large shallots, minced
• 4 garlic cloves, minced
• 5 dried shiitake mushrooms, rehydrated, sliced
• 1/4 cup light soy sauce
• 2 Tbsp dark soy sauce
• 1/4 cup Shaoxing wine
• 1 Tbsp sugar
• 1 1/2 cup chicken broth
• 1 Tbsp kief honey
• 4 eggs

Ingredients for Aromatics:
• 1/2 tsp white pepper, ground
• 1/4 tsp Sichuan peppercorn, ground
• 4 star anise, whole
• 3 slices of ginger
• 1 cinnamon stick
• 3 Bay leaves
• 1/2 tsp ground cloves
• 1 tsp dried orange peel, ground, optional 

To Serve:
• Cooked white rice
• Cilantro
• Green onions, sliced
• Yellow pickled daikon, optional

Directions:
1. Using a butcher knife, dice pork belly into small chunks, about 1/4". 
2. In a large stock pot, heat vegetable oil on medium-high heat. Fry shallots until crisp and golden brown, about 3-4 minutes. Using a slotted spoon, transfer the fried shallots into a small bowl, keep the infused oil in the stock pot.
3. Fry the pork belly in the stock pot, stirring frequently until the pork browns, about 5-8 minutes. Once brown, add minced garlic, cook for another minute. 
4. Add shiitake mushroom, Shaoxing wine, dark and light soy sauce, sugar, chicken broth, fried shallots, and all the aromatics. Once it comes to a boil, cover the pot and bring the heat down to a slow simmer for 40 minutes.  
5. While the pork is simmering, bring a separate pot of water to boil. Add eggs and boil for 7 minutes. Drain and shock in cold water to stop the cooking. Peel the eggs and set aside. 
6. After 40 minutes of simmering, uncover the pot and bring back to a boil to thicken the sauce, about 5 minutes. 
7. Remove from heat and pick out the star anise, bay leaves, cinnamon stick, and ginger slices. Stir in the medicated kief honey and add boiled eggs. Salt to taste. 
8. Serve over rice with cilantro, green onions, egg, and pickled daikon.
