For the first time in a century, it’s 420 for the entire month. Unfortunately, we’re all sheltered-in-place until the Covid-19 pandemic is over, which could be months. It is the most unusual time. While it would be incredible to be out and about enjoying this once in a lifetime event with friends, the best medicine is for us to celebrate indoors and stay safe. 

Now is a time for solidarity, compassion, and lots of cooking at home. This White Chocolate and Blueberry Fudge recipe uses minimal, simple ingredients you can find in a standard grocery store or possibly already in your home pantry. All you need is to get your Satori Blueberries in Dark Chocolate delivered and you are golden!

White Chocolate and Blueberry Fudge with Satori Blueberries in Dark Chocolate
Products:
CBD Satori Blueberries in Dark Chocolate or Satori Blueberries in Dark Chocolate
Dosage: 2mg THC / 2mg CBD per piece
Makes 16 pieces 

Berry Reduction Ingredients:
• 3/4 cup frozen blueberries or mixed berries
• 1 Tbsp lemon juice, fresh
• 1 Tbsp sugar
• 2 tsp cornstarch

Fudge Ingredients:
• 1 (14 oz.) can sweetened condensed milk
• 20 oz. white chocolate chips
• 3 Tbsp unsalted butter, room temperature
• 1 tsp vanilla extract
• Pinch of kosher salt
• 16 pieces Satori Blueberries in Dark Chocolate

Directions:
1. Combine frozen berries, lemon juice, and sugar in a saucepan over medium heat and bring to a slow simmer. Using a mesh strainer, dust the cornstarch into the saucepan so that it doesn’t clump. Stir to combine. 
2. Cook until thickened; about 10 minutes, stirring frequently while mashing the berries. 
3. Remove from heat and pass through a mesh strainer to strain the liquid. Discard the seeds and set the berry reduction aside. 
4. Grease an 8-inch square baking dish with non-stick spray and line with parchment paper.
5. In a medium saucepan over medium heat, add sweetened condensed milk with white chocolate. Using a spatula, stir frequently until fully combined and thickened; about 8 minutes. 
6. Add butter, vanilla extract, and a pinch of salt. Stir until combined and remove from heat. Add 2 tablespoons of the berry reduction into the saucepan and fold it into the mixture twice for a swirl effect. 
7. Pour the mixture into prepared baking dish. Add small drops of berry reduction on top of the fudge and use a toothpick to swirl for a marble effect. 
8. Place 16 Satori Blueberries in Dark Chocolate on top of the fudge mixture in a 4x4 grid. 
9. Chill in the refrigerator for at least 2 hours before removing and slicing into 16 squares to enjoy.
